FOOD SAFETY REGULATIONS

The Food Safety (General Food Hygiene) Regulations and the Food Safety (Temperature control) Regulations provide that proprietors of food businesses should ensure that food premises are kept clean and hygienic and maintained in good repair and condition.

Specified operations, such as the preparation, processing and manufacturing of food, must be carried out in a hygienic way and, to ensure food safety, the proprietor of a food business must ensure that adequate safety procedures are identified, implemented, maintained and reviewed.

All persons working in food handling areas must maintain a high degree of personal cleanliness and hygiene and wear suitable, clean and, where appropriate, protective clothing.

All persons, engaged in the food business, who handle food must be supervised and instructed and/or trained in food hygiene matters, in accordance with their work activities.

In addition, the proprietor of a food business must ensure that all food materials and ingredients are stored in the correct conditions and at the correct temperatures.
NB. A 'food business' is any undertaking, whether carried on for profit or not, which carries out any operations in which food is prepared, processed, manufactured, packages, stored, transported, distributed, handled or offered for sale or supply.
